Responsibilities

• Select, fillet, and fabricate various types of fish while adhering to industry standards.
• Ensure the proper storage, handling, and portioning of fish and seafood items to maintain freshness and quality.
• Collaborate with other kitchen staff to develop and implement fish-based menu items.
• Monitor food preparation and serving to ensure adherence to safety and sanitation standards.
• Maintain a clean and organized work area, including proper cleaning and sanitization of tools and equipment.
• Train and mentor junior kitchen staff on fish fabrication techniques and best practices.
• Assist with inventory management, ensuring all fish and seafood supplies are adequately stocked and rotated.

Requirements

• Minimum of 3 years of experience in fish fabrication or a similar role
• Extensive knowledge of various fish species, fabrication techniques, and cooking methods
• Strong attention to detail and commitment to quality in food presentation
• Ability to work in a fast-paced kitchen environment
• Excellent communication and teamwork skills
• Knowledge of food safety and sanitation regulations
• Flexibility to work nights, weekends, and holidays as required
